
SWEET POTATO FRENCH FRIES
Coax your little one into eating vegetables with these sweet and crunchy fries.
6 medium size sweet potatoes (yams)
¼ cup of extra virgin olive oil
2 teaspoons of seasoned salt
Pepper to taste
Peel and cup sweet potatoes in ½-inch strips. With a pastry brush, coat with olive oil. Spread the fries evenly on a baking sheet and sprinkle with seasoned salt. Pre-heat oven to 400’F and bake for 45 minutes turning every 10 minutes. Put on medium broil for final 5 minutes for added crispness.
